MY WEEKEND: a very happy mum



What a lovely weekend with an early morning start in the gym.  With me going to my back to back dance class and unikurve.  While my son go to his swim school with daddy.
My son bake me an apple cake with me helping a little bit but with all honesty he did all the work.


MADE WITH LOVE

ingredients:
125 g butter, diced plus extra to grease.
225 g self raising flour( i use gluten free flour)
175 g granulated sugar
2 large eggs
1 granny smith apples peeled, cored and sliced
100 g jam ( apricot jam is nice if you have otherwise strawberry is ok)
1 tbsp lemon juice.

measure and set up the ingredients before you begin.  It is going to be messy but nevermine the main thing is that they have a go and have fun.  Let them washed their hands and put an apron.

STEP
preheat the oven to 190 gas mark 5.  grease the baseline of a tin.
put the flour and a pinch of salt in a large bowl, add dice butter and rub in the flour until mixture looks like fine breadcrumbs.  Add 140g sugar with the beaten eggs and stir well.
Spread the mixture in the tin then top it with the apple slices.
bake 40-50 minutes
cool for 10 minutes, unmould and put on a plate to cool.
warm the jam and juice in a small pan.  sieve the mixture and while it still warm, brush over the top of the cake.
serve.




a beautiful early morning day at our local fitness club.

Here at our local fitness club which i been a member since 2001.  Its been totally refurbished in 2006.   Having a healthclub like this in where i live had played the major recovery program for me after my cancer illness.  Now again helping me beat my thyroid desease.
         I hate diet but exercise even  moderate definitely help me stay positive in life.        
         Thyroid desease (hyperthyroidism) is our hereditary desease in our family.  My sister suffer from it
         and had radioactive therapy. 
         I would probably do either the radioactive or surgery  if my thyroid start acting up again.     
         At the moment,  i try to balance my life as a busy mum and getting some fitness back to my regime. 
         It is really important guys when we are above 40s....we must take care of our health.

 trying to fight the boredom that the weather brought this week.  the li'l one look so cute with his new polarn o pyrets.  he is full of energy and spirit even though he does things same each day.   he is just happy to go out and play, go to shops or ride a bus. and would jump of  joy seing a train past by.  Simple pleasures!

MIDWEEK INSPIRATION: Geometric shapes

Finally i had sat down to do some post.  I haven't been lazy, just been busy doing some work for other people.  I started going to the gym as much as i can get a free time while my son is with his childminder.  I don't know if i mention it before,  that i been suffering from a thyroid desease- hyperthroidism- also called Graves.  I been on medication of antithyroid drugs carbimazole since May last year.  At the moment my bloodtest report clinically and biochrmically euthyroid.  i think they mean balance.  My heart palpitation has definitely stop but i have put on a lot of weight.  I started to go back to the gym when i started to feel really horrible, like muscle weekness and was looking really bloated.  
Anyway to change the subject,  i really like abstract geometrical shapes in an art form and used as a feature walls or accent.

Welcome Spring!

After a long wet , windy  and cold winter.  Spring in england is nearly here. Spring in this part of the world always brings good spirit in the air.  This year was a miserable winter.  Flooding in some part of the country.  So now people are coming out feeling more positive again.  Its now time to re- energize...freshen up.
